Hey. What’s up! Got my first weigh-in day tomorrow. I had a good week, and feel great! Sucks that my foot is fractured so I can’t exercise. I have been eating some awesome stuff this week. My kitchen was getting remodeled so I relied on restaurants and fast food WAY to much!

Some of the things I ate this week: Spicy Roasted Salmon, Curried Shrimp and couscous salad, Turkey Dip Sandwich (like a french dip but with deli Turkey, wheat roll, and chicken jus), Peach and Banana Smoothie, Thai Beef salad, etc…

Today for dinner I had Grilled Red Snapper. So good (and good for you)! I cut slits in it and stuff with cilantro, tons of garlic, and green onion. I will give you an update video tomorrow. The plan let’s me eat out at restaurants, but I just got my kitchen back and missed cooking. Probably eat out more next week since I do enjoy it. Ok- here’s the basic recipe for the grilled fish.

Grilled Whole Fish

Take a nice fresh whole fish. Small Salmon, snapper, sea bass, trout work well for this. Cut three slits on each side of the fish and stuff it with your favorite chopped herbs, garlic, and green onion. Salt and pepper the fish liberally on both sides, squeeze some lemon or lime over it, and drizzle some olive oil on it and rub in real good. Let sit for 15-30 minutes. Meanwhile preheat the grill to medium heat. Oil the Grill and cook for 10 minutes each side.
