I was cooking for myself tonight, and the great thing about cooking for just yourself is that you can have the wierdest combinations on the plate, and as long as your happy…who cares? Wild Alaskan Cod was on sale at the grocery store the other day. I have this easy and tasty recipe that I use with black cod, but black cod can be tough to find, so I thought hey, why not try it on regular cod? It worked great. The only thing is that you have to let it marinate for 24 hours. If you’re pinched for time then at least give it 4 hours in the marinade. I was going through my camera and came across this picture. It was when I was down in the Caribbean doing that yacht charter in December. I used it as a healthy and light “sauce” for roasted Halibut. I have been making some soups and other not too exciting stuff lately because my friend wasn’t feeling good. Well, her health was back, so it was time to unleash the fury again.
