It’s flavorful and a snap to put together. It’s also all done in a single pan so clean up isn’t an issue. I didn’t have any Greek olives or i would have added as well.
Greek Chicken Skillet
Serves 4
2 ea. Chicken Breast Halves
1 tbsp. Olive Oil
2 cups Sliced Mushrooms
1 ea. Diced Onions
1 Medium Tomato chopped
2 Garlic Cloves
1 Cup Frozen Spinach
1/4 cup white wine
1/2 Cup Crumbled Feta Cheese
Pound the chicken and cut in to 8 pieces. Salt and pepper the chicken and cook in a skillet until cooked through and remove to a plate. Add mushrooms, onions, tomato, garlic and spinach to the skillet and cook until softened, add wine and cook for a few more minutes. Add the chicken and any juices back in the pan along with the cheese.

It’s getting cold here and I decided to make a dish with chicken and apples since chicken breast was buy one get one free at the grocery store. That’s the fun of having cooking knowledge, I never really know what I’m going to cook for dinner. I’m pretty carnivorous so I usually head over to the meat section and see what’s on sale and go from there. I take pride in having a kick-a$$ grocery bill where I’ve saved a ton of money.
If your a vegetarian you could do the same thing, just look for what’s on sale in the produce area, or better yet hit up a farmers market if you have any in your area. The chicken dish is around 275 calories, I had some apples left over so I cooked them down with some carrots in a little chicken stock and honey.
Autumn Apple Chicken
Serves 4
2 chicken breast halves
1 tsp. olive oil
1 apple, peeled and chopped
1/2 onion, chopped
1 teaspoon butter
1 teaspoon sugar
4 slices cheddar cheese
Cut each chicken in half. Place each piece in a storage bag and beat to 1/2″ thin. Season the chicken with salt and pepper and brown on both sides in a skillet and set aside on a plate. Add butter to the skillet and add butter, apples, onions, sugar and salt and pepper. Cook over medium heat until softened. Preheat broiler. Place apple mixture over each chicken and top with cheese. Broil for a few minutes to melt the cheese.
